Spicy Sausage and Spinach Rigatoni (5 ingredients)

Ingredients

  • 2 hot italian sausages

  • 6  oz spinach

  • 1½ cup tomato sauce

  • ½ cup heavy cream

  • 10 oz rigatoni pasta

  • From the pantry
  • Salt

  • Pepper

  • Water

Directions

  • Cook the pasta in salted boiling water until al dente, or 1 minute short of the box instructions.
  • While the pasta cooks. Squeeze the filling out of the sausage into a cold nonstick pan. Turn the heat to medium and mash the sausage into bite sized chunks. Cook until the sausage is browned and a good amount of fat has rendered out. About 3-4 minutes.
  • Add the washed spinach and saute until wilted. Add the tomato sauce and bring to a simmer. Bring the heat to low and slowly add the cream, stirring constantly until a smooth glossy sauce forms.
  • Add a quarter cup of pasta water into the sauce and stir. Drain pasta and add to sauce. Mix and stir for 2-3 minutes until the sauce is thick and the pasta is well coated. Taste sauce and adjust for seasoning. Serve immediately.
