Watermelon Rind Pickles

Ingredients

  • 1 lb watermelon rind, peeled and chopped into slices

  • ½ cup apple cider vinegar

  • ½ cup water

  • ¼ cup sugar

  • 2 tsp kosher salt

Directions

  • Add rinds, vinegar, water, sugar, and salt to a medium pot. Heat on medium high until boiling.
  • Turn the heat off and let cool for at least 30 minutes.
